This is an interesting coffee. After the traditional processing of the coffee, it is placed in an open-sided warehouse. Throughout the monsoon season, wet winds blow across the beans, as the workers turn them over to ensure they don't mold. This process washes out the beans, and is said to imitate the taste of coffee from centuries ago when coffee was transported across the ocean in wooden-hulled boats.

This is a really interesting coffee. I picked it out of a few different lots as the most interesting of the Hartmann coffees offered by Ninety Plus. The "honey" refers to the processing method used with the coffee. Instead of depulping the coffee, fermenting, washing off the mucilage, and drying the parchment, the Hartmann family used a "pulped natural" method.
